Yuriko's Baking Diary - Kueh Semperit (Dahlia Cookies) Recipe

KUEH SEMPERIT / KUIH SEMPERIT / DAHLIA COOKIES



Looks Pretty, Buttery, and Melts in the mouth! Super yummylicious! My husband's favourite cookies! He finished all sooooo quickly I had to make another batch for him!



INGREDIENTS
125g Salted Butter (Softened to room temperature)
70g Icing Sugar
170g Plain Flour
20g Custard Flour
60g Cornflour
1 Egg Yolk
1/4 tsp Vanilla Extract / Rose Essence / Lemon Flavouring
1 tsp Chopped Cherries





METHOD
1) Preheat oven to 150 degree celsius.
2) Sift plain flour, custard flour and cornflour in a large bowl and mix well.
3) Use an electric mixer and cream the butter and icing sugar for about 5 minutes til light and fluffy. Add in the egg yolk and vanilla extract and mix until combined.
4) Use a piping nozzle and pipe out the dough on a tray lined with parchment paper. Squeeze dough out, and twist to cut it.
5) Decorate with a piece of cherry in the centre. (Press lightly)
6) Bake in oven for 22-24 minutes. (Cookies should not turn brown.) Cool in tray for 2-3 minutes before removing and transferring to a cooling rack to cool completely before storing in an airtight container.






Made some in other variations too! You could put colorful sprinkles or chocolate chips as well! =)

ALMOND SUGEE COOKIES

 

My favourite cookies of all Chinese New Year Goodies! Melts in the mouth and has a sweet savoury taste that lingers in your mouth and makes you wanna have more!! SUPER LOVE! Its so addictive that my friends and sister-in-law are asking for more, cause they have already finished everything!!

Best of all, it is SOOOOOOO EASYYYY TO MAKE!!

INGREDIENTS
80g Almond Flour
150g Plain Flour
100g Sunflower / Olive Oil (Or any cooking oil of your preference)
50g Icing sugar (You can add more if you like it sweeter)
1/2 tsp Salt
1/2 tsp Bicarbonate Soda (Baking Soda)
1 Egg Yolk (For egg wash)(Optional - I didnt put any as I like my sugee cookies to be pale looking)

METHOD
1) Preheat oven to 170 degree celcius.
2) Mix all the ingredients (except the eggwash) in a large mixing bowl til doughy
3) Take a spoon of dough and roll them into round balls and place them on a lined baking tray. (Optional - Brush on the eggwash on the top if you like the top to look golden)
4) Bake for 15mins or until golden brown.
5) Allow to cool on a cooling rack before you pack them into bottles, eat them or serve them!
